Agricola El Nazario continues working on its commitment to food safety through HACCP certification. Recently, a training session was held for mid-level managers, where Jeremías Pérez addressed key subjects on identifying contamination risks in the farming environment.
Attendees learned about the significance of applying phytosanitary products, preventing cross-contamination during harvest, and product traceability. Also, essential control points were discussed, such as water quality for irrigation, responsible use of fertilizers, and pest and disease control, as well as proper temperature management in storage and transportation.

HACCP, which stands for “Hazard Analysis and Critical Control Points”, is a management system used to ensure food safety. This approach is based on the identification, evaluation and control of hazards which may affect food safety at all production stages, from raw materials to end consumption.
The HACCP system is based on seven key principles:
1. Hazard analysis: Identifying biological, chemical, and physical hazards which may compromise food safety.
2. Determine the critical control points (CCPs): Identifying points in the process where control measures can be applied to eliminate or reduce hazards to acceptable levels.
3. Establish critical limits: Defining specific criteria that must be met for each CCP, such as temperatures, cooking times, pH, etc.

4. Establish a monitoring system: Implementing procedures to monitor CCPs and ensure they remain within the established critical limits.
5. Establish corrective actions: Defining actions to be taken when a CCP is not met.
6. Establish verification procedures: Implementing methods to verify that the HACCP system is working effectively.
7. Establish records and documentation: Maintain records of all activities related to the HACCP system to demonstrate that procedures are being followed, and requirements are being met.
HACCP is widely used in the food industry and is a requirement in many countries to ensure food safety. Its implementation helps preventing food-related public health problems and improves product quality.
