Food Safety Culture refers to the set of values, habits, attitudes, and practices shared by all individuals within a company to ensure that the food grown, harvested, or packed is safe for the consumer. In farming companies dedicated to growing and packing vegetables, food safety is an essential aspect, as these products are generally consumed fresh and with little subsequent processing. Therefore, any oversight at any stage can pose a risk to consumer health.

This concept started becoming more relevant worldwide around the 1990s and early 2000s, when international markets and health authorities started demanding more stringent systems to prevent foodborne illnesses. Over time, certification schemes and regulations pushed farming companies, in addition to having manuals, procedures, or audits, to ensure that every worker, supervisor, and manager understood the importance of their role in preventing food contamination and acted responsibly in their daily work. Initially, implementation was challenging, as it required modifying traditional habits and routines.

Implementing a food safety culture begins with the commitment of the management, as organizational leaders must actively promote the importance of growing safe food. This is achieved through continuous staff training, clear communication of responsibilities for each worker, and establishing procedures that facilitate compliance with good agricultural and manufacturing practices. It is also important to foster an environment where workers can report risks or problems without fear, since early identification of situations that may compromise food safety allows timely corrective actions to be taken.

In practice, food safety culture is reflected in everyday actions such as proper handwashing, correct use of personal hygiene equipment, appropriate product handling during harvesting and packing, cleaning and disinfecting tools and surfaces, as well as pest control, and proper management of water used in operations. When these practices are consistently developed with full awareness of their importance, the confidence from consumers and from the market which receives the farm products is strengthened. The farming companies within the Veggies From Mexico community not only include food safety culture subjects in their annual training programs, but also cover environmental awareness, health, hygiene, and occupational safety for all company workers. This way, the purpose is not only to achieve safe food, but also to protect workers and the environment throughout the process.

Food safety certification schemes also recognize the importance of this concept. In the case of the Primus GFS v4.0 standard, food safety culture is part of the requirements intended for ensuring that companies not only have documented systems, but also that they truly apply them in their operations. This scheme promotes staff training, the involvement of the management area, internal communication, employee feedback, and continuous improvement of food safety programs, with the purpose of strengthening the commitment across the entire organization.
