If the past has taught us anything, it’s that trends, whether in fashion, music, or food, have a knack for cycling back with a twist. Bell-bottoms, a style of trousers that become wider from the knees downward, evolve into flared jeans, disco inspires electronic dance music, and oat milk turns into oat everything. 

Just as the runway sets the stage for what we wear, consumer preferences are reshaping what lands on our plates. So, what’s defining food today, and where are we headed next?

The Rise of Plant-Based Proteins

The plant-based movement has transformed from a niche lifestyle choice into a culinary revolution. With sustainability, health consciousness, and animal welfare driving demand, products like oat milk and plant-based burgers have become household staples. But the innovation doesn’t stop there. Mushrooms, for instance, are stepping into the spotlight, offering nutrient-dense and environmentally friendly options.
